Ingredients:
For the Dosa Batter:1 cup rice (preferably dosa rice)
¼ cup urad dal (split black gram)
1 tsp fenugreek seeds (important)
Water (for soaking and grinding)
Salt (to taste)
For the Potato
Filling:3 medium-sized potatoes (boiled and mashed)
1 tbsp oil
1 tsp mustard seeds
1 onion (finely chopped)
1 green chili (slit)
1 tsp turmeric powder
1 tsp cumin powderFresh coriander leaves (for garnish)

Prepare the Dosa Batter:
Soak the rice, urad dal, and fenugreek seeds (if using) in water for at least 6 hours or overnight.
Drain the soaked ingredients and grind them together into a smooth batter, adding water as necessary.
The consistency should be pourable but not too runny.
Allow the batter to ferment for 8-12 hours, or until it has increased in volume and shows bubbles on the surface.
Prepare the Potato Filling:Heat oil in a pan and add mustard seeds.
Once they splutter, add the chopped onions and green chili.Sauté until the onions turn golden brown.
Then, add turmeric and cumin powder.Add the boiled, mashed potatoes and mix well. Season with salt, and cook for a few more minutes, stirring occasionally.
Garnish with fresh coriander leaves and set aside.Making the Masala Dosa:Heat a non-stick or cast-iron pan and lightly grease it with oil.
Pour a ladle of the dosa batter onto the hot pan and spread it in a circular motion to form a thin, even layer.
Drizzle a little oil around the edges and let the dosa cook on medium heat until it becomes crispy and golden brown.
Place a portion of the potato filling in the center, fold the dosa, and serve hot with coconut chutney and sambar.
