1 medium head of cauliflower (gobi), cut into florets

1 medium onion, finely chopped

2 medium tomatoes, chopped

2 green chilies, slit

1 teaspoon ginger-garlic paste

1 tablespoon oil (avocado or sunflower oil)

1 teaspoon cumin seeds

½ teaspoon turmeric powder

1 teaspoon coriander powder

1 teaspoon cumin powder

½ teaspoon garam masala
-
¾ teaspoon red chili powder

¾ teaspoon salt (adjust to taste)

½ cup water

Fresh coriander leaves for garnish
🔥 Instructions
1. Prep the Cauliflower:

Rinse cauliflower florets thoroughly. Optionally, blanch in hot water for 2–3 minutes to remove impurities. Drain and set aside.
2. Sauté Aromatics:

Heat oil in an Instant Pot (or regular pot). Add cumin seeds and let them crackle.

Add chopped onions and green chilies; sauté until translucent.

Stir in ginger-garlic paste and cook for another minute.
3. Add Spices & Tomatoes:

Add turmeric, coriander powder, cumin powder, and red chili powder. Mix well.

Add chopped tomatoes and cook until they turn mushy.
4. Cook the Cauliflower:

Add cauliflower florets, salt, and water. Stir gently to coat with masala.

If using Instant Pot: Close lid, pressure cook on high for 1 minute, then quick release.

If stovetop: Cover and cook for 8–10 minutes on medium flame until cauliflower is tender but not mushy.
