Ingredients

For the Instant Idli Mix:

  • 2 cups rice flour

  • 1 cup urad dal flour (black gram flour)

  • 1/2 cup poha (flattened rice), powdered

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 teaspoon fenugreek powder (optional)

For Making Instant Idlis:

  • 1 cup instant idli mix

  • 3/4 cup water or buttermilk

  • 1/2 teaspoon eno (fruit salt) or baking soda

  • 1 tablespoon lemon juice (for extra softness)

Instructions

1. Prepare the Instant Idli Mix:

  • In a dry pan, roast the rice flour, urad dal flour, and powdered poha separately on low flame for 2-3 minutes until aromatic.

  • Allow them to cool, then mix well with salt, baking soda, and fenugreek powder.

  • Store in an airtight container for up to 1 month.

2. Prepare the Idli Batter:

  • In a bowl, take 1 cup of the instant idli mix and gradually add water or buttermilk, stirring continuously to avoid lumps.

  • Let the batter rest for 10 minutes.

  • Just before steaming, add eno or baking soda and mix gently.

3. Steam the Idlis:

  • Grease idli molds and pour the batter into them.

  • Steam for 12-15 minutes on medium heat.

  • Insert a toothpick to check if the idlis are cooked through. If it comes out clean, they’re ready!

4. Serve & Enjoy:
