Ingredients
For the Instant Idli Mix:

2 cups rice flour

1 cup urad dal flour (black gram flour)

1/2 cup poha (flattened rice), powdered

1 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon fenugreek powder (optional)
For Making Instant Idlis:

1 cup instant idli mix
-
3/4 cup water or buttermilk

1/2 teaspoon eno (fruit salt) or baking soda

1 tablespoon lemon juice (for extra softness)
Instructions
1. Prepare the Instant Idli Mix:

In a dry pan, roast the rice flour, urad dal flour, and powdered poha separately on low flame for 2-3 minutes until aromatic.

Allow them to cool, then mix well with salt, baking soda, and fenugreek powder.

Store in an airtight container for up to 1 month.
2. Prepare the Idli Batter:

In a bowl, take 1 cup of the instant idli mix and gradually add water or buttermilk, stirring continuously to avoid lumps.

Let the batter rest for 10 minutes.

Just before steaming, add eno or baking soda and mix gently.
3. Steam the Idlis:

Grease idli molds and pour the batter into them.

Steam for 12-15 minutes on medium heat.

Insert a toothpick to check if the idlis are cooked through. If it comes out clean, they’re ready!
