🌸 Tender Coconut Milk Rice Balls – Sweet Tamil Delight (Paal Kozhukattai Twist)


🌿 Ingredients

For the Rice Balls:

  • 1 cup rice flour (idiyappam flour preferred)

  • 1 cup water

  • 1 tsp ghee

  • A pinch of salt

For Coconut Milk Base:

  • 1½ cups thin coconut milk

  • ¾ cup thick coconut milk

  • ½ cup jaggery (adjust to taste)

  • ½ tsp cardamom powder

  • 1 tsp rice flour (mixed with 2 tbsp water – optional, for thickness)

Optional Toppings:

  • 1 tsp roasted sesame seeds or chopped cashews in ghee

  • Few fresh coconut bits


🍯 Instructions

1. Prepare the Dough:

  1. In a saucepan, bring 1 cup of water, ghee, and a pinch of salt to a gentle boil

  2. Reduce the flame and stir in the rice flour quickly.

  3. Mix well until it forms a soft dough. Let it cool slightly.

2. Make the Kozhukattai:

  1. Grease your palms and roll small marble-sized balls from the dough.

  2. Keep the balls covered with a damp cloth to prevent drying.

3. Cook the Kozhukattai:

  1. Heat 1½ cups of thin coconut milk in a pan and bring it to a gentle simmer.

  2. Gently drop the rice balls in. Cook on low heat for 10–12 minutes or until they turn slightly translucent and float.

4. Sweeten the Mix:

  1. Add jaggery and cardamom powder. Mix until the jaggery dissolves.

  2. Stir in ¾ cup thick coconut milk and simmer for 2 minutes. Do not boil after adding thick coconut milk.

  3. If needed, add a slurry of rice flour and water to thicken slightly.


5. Garnish and Serve:

  1. Garnish with roasted sesame seeds or cashews.

  2. Serve warm or chilled — both taste heavenly!
