🌿 Ingredients
For the Rice Balls:

1 cup rice flour (idiyappam flour preferred)

1 cup water

1 tsp ghee

A pinch of salt
For Coconut Milk Base:

1½ cups thin coconut milk

¾ cup thick coconut milk
-
½ cup jaggery (adjust to taste)

½ tsp cardamom powder
-
1 tsp rice flour (mixed with 2 tbsp water – optional, for thickness)
Optional Toppings:

1 tsp roasted sesame seeds or chopped cashews in ghee

Few fresh coconut bits
🍯 Instructions
1. Prepare the Dough:

In a saucepan, bring 1 cup of water, ghee, and a pinch of salt to a gentle boil

Reduce the flame and stir in the rice flour quickly.

Mix well until it forms a soft dough. Let it cool slightly.
2. Make the Kozhukattai:

Grease your palms and roll small marble-sized balls from the dough.

Keep the balls covered with a damp cloth to prevent drying.
3. Cook the Kozhukattai:

Heat 1½ cups of thin coconut milk in a pan and bring it to a gentle simmer.

Gently drop the rice balls in. Cook on low heat for 10–12 minutes or until they turn slightly translucent and float.
4. Sweeten the Mix:

Add jaggery and cardamom powder. Mix until the jaggery dissolves.

Stir in ¾ cup thick coconut milk and simmer for 2 minutes. Do not boil after adding thick coconut milk.

If needed, add a slurry of rice flour and water to thicken slightly.
5. Garnish and Serve:

Garnish with roasted sesame seeds or cashews.
